The word "heaven" in this verse is the description of the whole universe. Allah swt describes that on the day of Qiyamah the whole universe will be rolled up like a written scroll.The Arabic word used is "Sijill" which means an old rolled page.This is a beautiful simile.An example of this kind of page is:

This page is roll like.When writer writes on it he gradually pulls it and after writing.He rolls it and put it aside.
The meaning of this simile in this verse is that the universe which is visible and present is rolling day by day.In the day of Qiyamah it shall be rolled completely like this kind of page.
The scientific interpretation of this verse can be that on the day of Qiyamah this universe shall be rolled up like this page but its context will remain although its shape shall be changed.After that Allah swt says:
"As we began the first creation,we will repeat it." 21:104
This is a scientifically correct fact because modern science describes Big Crunch which means the gradual collection of all the contents of universe into the same singularity(rolling up like the page which gradually rolls up ut all its contents remain the same and it can be opened/expanded again (the ig bang). Ponder how beautiful simile is it!) and then new creation of universe as Holy Quran describes.For Big Crunch see:

The one-liner of the whole description is that in the verse the word "heaven" is not only the "sky" rather it means the whole universe and the description of the Holy Quran is exactly compatible with the theories of the modern science.
